  • Hatch Chile is not a variety. Rather, it designates the region that the green chile is grown in. Varieties of chile range from NM 6-4, Sandia, Big Jim and Barker, and Hatch Green or Red Chile can be produced from any of these varieties.
  • The important point is that Hatch Chile is ONLY grown in the region surrounding the small village of Hatch, New Mexico. Bordered to the west by a mountain range, and to the east by the Rio Grande River, Hatch, New Mexico in Dona Ana County has become synonymous with the world's best tasting red and green chile. If it's not from Hatch, New Mexico, it isn't Hatch Green or Red Chile!
