These dried Top Quality Hatch New Mexico Sandia Chile Ristras will delight with their beauty, and satisfy even the most discriminating of chile aficionados with their flavor. Individually hand strung in New Mexico using Sandia Chile, this is a milder chile than the smaller & hotter piquen ristra.
Depending on your shipping location, we may wait until the Monday following your order to ship your ristra to avoid it being boxed over the weekend.

The life of a ristra
When the weather starts turning colder fresh ristras are being freshly tied. These ristras are made using fresh chile just picked from the plant. These are still full of water. These ristras are very heavy, are a beautiful vibrant red. and will become moldy if not hung out in the sun. We can special order fresh ristras in any size, but shipping on these will be expensive due the weight of the ristra and the urgency for it to ship rapidly to avoid rotting inside the box. The ristras we ship unless special ordered are dry, and can be boxed.
As chile dries the color will darken and/or lighten, and continue to change throughout the natural lifespan of the dry chile.
New Mexico has 1 chile harvest per year in the fall. The farther away from fall you are,the older the chile will be. Please expect variations in color accordingly.

This string of real New Mexico Sandia Chile is hand strung in the traditional manner using NM Chile pods. Approx. 2 feet long
  • From mid September until frost, green chile matures and turns deep red. New Mexicans have traditionally harvested and strung red chile into colorful strings or "ristras." The chile is allowed to dry in the New Mexico sun and then is stored for use in various tantalizing food dishes during the winter.

I have yet to receive my two ristras a week after they were supposed to have shipped. When I go to the tracking site the only entry is that a label was created on the 30th of October. I am concerned that my food stuff is untracked for so long a time.
